Ingredients

Adjust Servings:
1 eating apple, cored and diced into 1cm cubes
1/2 tsp ground sweet cinnamon
1/4 tsp ground ginger
pinch of nutmeg
1 tsp runny honey
small handful of fresh blackberries
50g jumbo porridge oats
100ml apple juice
150ml semi-skimmed milk
1 tbsp pecan nuts
TO SERVE
small handful of granola (no added sugar)

Apple and blackberry crumble porridge

Who says you can’t have dessert for breakfast? This apple and blackberry porridge has all the flavours of a crumble, but minus the guilt and calories. Keeping the skin on the apple adds up to 332% more vitamin K and 20% more calcium than a peeled one.

  1. Add the diced apple to a small saucepan with the ground cinnamon, ginger, nutmeg, honey and a splash of water. Stir in half the blackberries and cook over a low heat, stirring occasionally, for 6-8 minutes until the apples have started to soften and the blackberries have almost broken down.

  2. Reserve half the apple and blackberry mixture for later, then add the porridge oats, milk and apple juice to the pan. Add a pinch of salt and set over a low-to-medium heat.

  3. Cook gently for about 5 minutes or until thick and creamy, stirring regularly to prevent the oats from sticking to the bottom of the pan.

  4. Meanwhile, place the pecans in a small frying pan and toast over a medium heat for about 2 minutes; tip onto a board and roughly chop.

  5. Loosen the porridge with extra milk, if desired, and empty into a bowl. Spoon the reserved apples and blackberries over the top with a small handful of granola and the toasted pecan nuts.
