Best banana bread

A proper family favourite. The key to a deliciously moist and sweet banana bread is to use the darkest, spottiest bananas possible. If you're watching your sugar intake, substitute some of the caster sugar for dried fruit like raisins or cranberries.

    1. Butter a loaf tin and line with baking parchment.

    2. Cream the butter and sugar together until light and fluffy, then gradually mix in the eggs. Fold in the mashed banana, self-raising flour, baking powder, cinnamon and vanilla extract, being careful not to over mix.

    3. Pour the mixture into the tin and bake in a preheated oven at 180C for 50 minutes or until cooked through. Cool in the tin for 10 minutes, then transfer to a wire rack.

    4. Mix the icing sugar with enough water to make a runny icing and drizzle over the top before serving.
