Ingredients

Adjust Servings:
6 rashers smoked streaky bacon, trimmed of excess fat
1 large avocado, stoned
1/4 tsp dried chilli flakes
Pinch of garlic granules
1/2 lime, juiced
2 wholemeal rolls
2 salad tomatoes, thinly sliced
Leaves of 1 baby gem lettuce

BLT with crushed avocado

Take the traditional bacon sarnie to another level with smashed avocado and a few chilli flakes for a spicy kick. Streaky bacon is a must for extra crispiness, and drizzling the wholemeal rolls with olive oil, rather than butter and mayo, sticks to the Mediterranean vibe and helps to reduce the saturated fat content.

    1. Spread the streaky bacon out on a lined baking tray and place under a hot grill. Cook for 3-4 minutes on each side until crisp and golden. Remove and set aside.

    2. In a bowl, mash the avocado with a fork and stir in the chilli flakes and garlic granules. Season with salt, pepper and lime juice to taste and set aside.

    3. Halve the wholemeal rolls and drizzle with olive oil. Place under the grill to toast, then spread with the smashed avocado. Layer with the sliced tomato, lettuce and three strips of bacon each.
