Ingredients

Adjust Servings:
2 bananas, 1 mashed, 1 sliced for garnish
125ml soya milk
1 tsp maple syrup, plus extra for drizzling
1/2 tsp vanilla extract
100g plain flour
1 tsp baking powder
1/2 ground sweet cinnamon
1/4 tsp salt
Pinch of nutmeg
50g fresh blueberries
Vegetable oil, for frying
FOR THE PEANUT BUTTER SAUCE
25g smooth peanut butter
1 tsp maple syrup
TO SERVE
1 tbsp flaked almonds, toasted

Blueberry and banana pancake stack

I’ve tried a few egg-less pancakes in the past and always struggled to get the texture right, but I’ve finally cracked it (excuse the pun) with this recipe which is a lot healthier than it looks. By making a quick peanut butter sauce, you’ve got the perfect pancake sandwich to indulge in.

  1. Add the mashed banana to a large bowl and mix with the soya milk, maple syrup and vanilla extract.

  2. In another bowl, combine the plain flour, baking powder, cinnamon, and a pinch each of nutmeg and salt, and whisk well. Make a well in the centre and slowly incorporate the banana milk. Gently stir in the blueberries and mix well.

  3. Preheat a large frying pan over a medium heat. Brush lightly with oil and add small ladlefuls of batter to form three pancakes in total, spaced apart.

  4. Shape into rounds and cook for 2-3 minutes, or until bubbles form on the top and the undersides are golden.

  5. Flip each pancake and cook for 1-2 minutes or until golden. Keep warm and repeat with the remaining batter.

  6. In a small pan, add the peanut butter and 1 tsp of maple syrup with a good splash of boiling water and stir vigorously over a high heat until a smooth paste forms.

  7. To serve, stack three pancakes up, top with banana slices and the peanut butter sauce, and sandwich with the rest of the pancakes.

  8. Drizzle with maple syrup and top with toasted almonds and extra banana slices.

*This recipe makes 6 pancakes.
