Ingredients

Adjust Servings:
1 tbsp vegetable oil
1 red onion, finely sliced
1/2 tsp mixed spice
1 cinnamon stick
8 juniper berries, lightly crushed
1/4 tsp ground nutmeg
2 slices of orange peel
1 medium red cabbage, shredded finely, white core discarded
2 eating apples, peeled, cored and diced into small cubes
30g raisins
1 tbsp granulated sugar
50ml balsamic vinegar
2 tbsp cranberry sauce

Braised red cabbage

The perfect accompaniment for your roast dinner. I've used this recipe for the last two Christmases and it's always a winner. The red cabbage is braised and pimped up with warming spices, balsamic vinegar and cranberry sauce.

  1. Add the vegetable oil to a pan and sauté the red onion gently for 5 minutes. Stir in the mixed spice, cinnamon stick, juniper berries, nutmeg and orange peel, then add the red cabbage and stir-fry for 3-4 minutes.

  2. Tip in the the apples, raisins, sugar and balsamic vinegar and stir well. Cover with a lid and cook gently for 40 minutes.

  3. Remove the lid and stir in the cranberry sauce. Cook, uncovered, for a further 5-10 minutes until the red cabbage is tender.

  4. Season to taste, remove the cinnamon stick, and transfer to a serving dish. Alternatively, let it cool and you can freeze it or keep it in the fridge to be reheated another time.
