Caramelised apple and yoghurt parfait

Perfect for breakfast or dessert, these low fat yoghurt parfaits are super simple to make and flavoured with Christmas spice. I used Skyr for the added protein but you can substitute for any thick yoghurt with no added sugar.

    1. Spread the walnuts out on a lined baking tray and roast in a preheated oven at 180C, shaking occasionally, until nicely toasted; about 10-12 minutes.

    2. Meanwhile, quarter and core the apples, then thinly slice into wedges.

    3. Heat a knob of butter in a saucepan and add the apples and raisins. Sprinkle with the cinnamon, ginger and nutmeg and add a splash of water and a drizzle of honey; about one teaspoon.

    4. Cook the apples over a medium heat for 6-8 minutes, turning occasionally, until slightly softened and caramelised.

    5. Divide half the Skyr yoghurt between glasses and top with the caramelised apples and raisins. Repeat the layers again, finishing with a drizzle of the apple juices. Top with the roasted walnuts just before serving.
