Ingredients

Adjust Servings:
100g rolled porridge oats
1/2 tsp ground sweet cinnamon
1 tsp ground ginger
Pinch of ground allspice
1/2 tsp vanilla bean paste
450ml semi-skimmed milk
TO SERVE
Honey, to drizzle
1 large ripe banana, finely sliced
1/2 pink dragon fruit, peeled and finely diced
Small handful of pecan nuts, roughly chopped

Gingerbread porridge

Refreshing pops of dragon fruit and banana balance the warmth of the ginger in this creamy porridge, which will make your house smell of gingerbread. Amusingly, ginger helps to eliminate excess gas from the digestive system, which is probably a good thing for some people!

    1. Tip the porridge oats into a small saucepan with the cinnamon, ginger, allspice, vanilla bean paste and a pinch of salt. Stir well and add the milk.

    2. Set over a low-to-medium heat and cook gently for 5-10 minutes until thick and creamy, stirring regularly to prevent the oats from sticking to the bottom of the pan.

    3. To serve, divide the porridge between bowls and drizzle with honey. Top with the sliced banana, dragon fruit and a scattering of chopped pecan nuts, if desired.
