Adjust Servings:
200g leftover duck, meat shredded
1/2 small cucumber, halved, deseeded and cut into matchsticks
4 spring onions, trimmed and finely sliced lengthways
1 iceberg lettuce, shredded
2 wholemeal tortilla wraps
50ml hoisin sauce

Leftover duck hoisin wraps

Is there a better way to use up leftover duck from a Chinese the night before? The beauty of this quick and easy lunch is that it requires minimal preparation aside from heating the tortillas and chopping up the spring onions, lettuce and cucumber.

    1. In a bowl, mix the leftover duck with half the hoisin sauce.

    2. Warm the tortillas in a dry frying pan and spread with the remaining hoisin sauce. Divide the duck between the wraps, and fill with cucumber, spring onion and lettuce,

    3. Fold two sides of the wrap over the top of the filling slightly, then roll up tightly and cut in half on the angle before serving.
