Adjust Servings:
4 medjool dates (about 80g), pitted and finely chopped
75g crunchy peanut butter (no added sugar)
75g maple syrup
250ml Greek yoghurt (0% fat)
250g jumbo porridge oats
50g dried raisins
25g dried cranberries
25g pumpkin seeds
15g cacao nibs
1 tbsp cacao powder
1 tsp vanilla extract
1/2 tsp salt

Peanut butter and cacao energy bars

Perfect for picnics, buffets or elevenses, these good-for-you energy bars are low in fat, free of added sugar and seriously addictive. The oats are mixed with peanut butter and Greek yoghurt and naturally sweetened with dried fruits, dates and a combination of cacao powder and cacao nibs.

  1. Place the medjool dates in a small saucepan and add a splash of boiling water. Cook over a low heat, stirring occasionally, until the dates have broken down into a thick purée.

  2. Add the peanut butter and maple syrup and stir until everything has melted together. Remove from the heat and set aside.

  3. Mix the Greek yoghurt, porridge oats, raisins, dried cranberries, pumpkin seeds, cacao nibs, cacao powder, vanilla extract and salt together in a large bowl.

  4. Once the peanut butter and date purée has cooled, stir into the oat mixture until completely coated.

  5. Tip the mixture into a 20cm square baking tin, lined with baking parchment, and press down firmly with the back of a spatula.

  6. Bake in a preheated at 170C for 20 minutes or until slightly crisp and golden on top.

  7. Cool completely in the tin, then cut into 12 bars. Keep in an airtight container for three days.
