Ingredients

Adjust Servings:
1 tsp olive oil
1 spring onion, trimmed and finely diced
1 salad tomato, finely diced
1/4 green pepper, deseeded and finely sliced
1/4 red pepper, deseeded and finely sliced
3 large free-range eggs, beaten
1/4 tsp dried chopped garlic
Splash of semi-skimmed milk
Smoked paprika, for dusting
Small handful of cheddar cheese (30% less fat), grated
TO SERVE
Fresh basil leaves, torn

Pizza frittata

Quick, convenient and super cheap to make. This protein-enriched frittata has all the flavours of your traditional pizza, but with half the calories. It makes for an egg-cellent lunch dish.

    1. Preheat the grill to high.

    2. Heat the olive oil in a small frying pan and stir-fry the spring onion, diced tomato and red and green peppers over a medium heat for 2 minutes or until softened.

    3. Add the beaten egg to a jug with the garlic, a splash of milk and a good grinding of black pepper. Pour into the pan and swirl around the edges. Leave for 15 seconds before roughing up the bottom with a spatula and redistributing the egg into all the cracks.

    4. Cook gently for 4-5 minutes or until the egg is nearly set, then dust with smoked paprika and top with grated cheddar cheese.

    5. Place the pan under the grill and leave for 2-3 minutes until bubbling and golden on top. Garnish with basil and serve with a side salad.
