Ingredients

Adjust Servings:
1 whole sea bass, gutted and scaled
2 dried bay leaves
1 lemon, cut into 3 slices, the rest cut into wedges
1/2 tbsp olive oil, plus extra for drizzling
150g Jersey Royal potatoes
3 garlic cloves, skin on
6 cherry tomatoes on the vine
1/4 x 290g jar roasted yellow and red peppers, drained and roughly chopped
8 pimento-stuffed olives
1/2 tsp capers, drained
TO SERVE
Fresh parsley, finely chopped, to garnish

Sicilian whole roasted sea bass

This Italian-inspired traybake for one is perfect for a busy weeknight and delivers plenty of protein, vitamins and healthy fats thanks to the addition of olives, peppers and cherry tomatoes. The recipe can be easily doubled and if you prefer, you can substitute the whole sea bass for fillets which will only take around 8 minutes to cook.

    1. To prepare the sea bass, pat the skin dry and cut five or six slits in the skin, being careful not to penetrate the flesh. Stuff the cavity with the dried bay leaves and three lemon slices. Season generously and set aside.

    2. Toss the potatoes with the olive oil and plenty of seasoning and spread out on a baking tray. Add the whole garlic cloves and roast in a preheated oven at 200C for 20 minutes.

    3. Remove the tray from the oven and give the potatoes a shake. Place the whole sea bass on top and nestle the tomatoes in at the side of the tray. Drizzle the sea bass with olive oil and roast for 15 minutes.

    4. Scatter over the olives, peppers and capers and return to the oven for a further 5 minutes or until the potatoes are crisp and the fish is cooked through. Garnish with fresh parsley and lemon wedges before serving.
