Ingredients

Adjust Servings:
2 skinless chicken breasts, cut into strips
2 tbsp chunky peanut butter
2 garlic cloves, crushed
1 tsp tikka curry powder
1 tsp light soy sauce (reduced salt)
2 tsp lime juice
2 sweet potatoes, skin on and chopped into wedges
1 tbsp olive oil
12 radishes
TO SERVE
1/2 tbsp black sesame seeds
Toasted sesame oil, to drizzle
Fresh coriander, finely chopped

Super easy satay chicken

An Asian twist on chicken and chips. Sweet potatoes count as 1 of your 5-a-day while the peppery radishes are an excellent source of antioxidants and vitamin C.

  1. In a bowl, mix the chicken strips with the peanut butter, garlic, curry powder, soy sauce and lime juice. Add a splash of boiling water to loosen, if needed, and leave to marinate in the fridge for at least 30 minutes or preferably overnight.

  2. Coat the sweet potato wedges in the olive oil, season well and spread out on a baking tray. Roast in a preheated oven at 200C for 40 minutes or until golden and tender. After 20 minutes, add the radishes and give the potatoes a good shake to ensure an even cook.

  3. Arrange the chicken on a separate baking tray and place in the oven for 8-10 minutes until cooked through.

  4. Sprinkle the sesame seeds and a drizzle of sesame oil over the sweet potato wedges and radishes and top with a scattering of coriander, if desired. Serve alongside the satay chicken and a side of steamed greens.
