Transform a boring pack of nuts into something special (and incredibly moreish) with my quick and easy gingerbread marinade. Once roasted, they can easily be packaged up as an emergency gift or served as nibbles for a Christmas party.
unsalted mixed nuts (peanuts, cashews, pecans, walnuts and hazelnuts)
ground sweet cinnamon
ground mixed spice
In a bowl, whisk the maple syrup, olive oil, ginger, cinnamon and mixed spice together to combine. Add the mixed nuts and stir well to coat.
Tip the nuts onto a baking tray lined with parchment and spread out evenly. Sprinkle with a little sea salt and roast in a preheated oven at 180C for for 20 minutes, turning once, until golden and crisp.
Set aside to cool and harden up before serving.
